Updates two MCPs from the Anthropic reference servers (now deprecated) to their official repositories: Redis and Perplexity. Their image references are unchanged, just the repo.
Also refreshed their env vars and tool lists.
Note I marked the REDIS_HOST as required because the default "127.0.0.1" won't work when the MCP is containerized.
